If I export data from a master sheet to a separate sheet will the data on the separate sheet change when I change data on the master sheet?

The information will be updated if you run the connection or the workflow
If you do not run it, the update will be just in the master sheet

To tun ONLY the connection:

And to Run the entire workflow you can click on the button “RUN”
